- 2 tsp. Sesame Oil
- 1 clove garlic minced
- 1 green onion minced
- 1/4 cup red pepper diced
- 1 small zucchini diced
- 1 cup cooked Amaranth
- Tamari to taste
Heat a skillet over medium heat and add oil.
Add garlic, green onion, zucchini and red pepper one at a time and cook until they are sealed and soft.
Mix cooked amaranth gently into the vegetables. Cook 5 minutes.
Season to taste with tamari before serviing.
Serve hot. Amaranth and vegetables make a complete meall accompany with a raw vegetable salad or relish.
