Salad can play and important role in your strategy for a healthful life. It is so easy to include salad as an appetizer , side dish, main meal or snack. And the varieties, styles and sizes are limitless! There's no valid reason to become bored with the salad. We can keep our nutrition level up, our weight down and variety in our diet as well.

VITAMINS

We can't taste them, see them or hear them, but salads are teaming with vitamins. One thing we can do, however, is feel them. The vitamin content in salads will supply us with a healthy body and energy we can feel, especially today when much of our so-called food is manufactured instead of grown and delivered to us in boxes and bags.

Vitamin's strengthen and stabilize the immune system and have a positive influence on mental and physical performance. The vitamins in a healthful salad also supply the natural protection we need to fight against the pollution and harmful chemicals in our diet and our lives. Only those who supply their bodies with a sufficient amount of vitamins have the strength to fight against the various diseases of our modern civilization.

Some vitamins are water soluble, some are fat soluble, and all are oxygen and heat sensitive. Vitamins A,D,E and K can only be absorbed from our body in connection with fat, which is no problem for the salad eater. We get our essential fatty acids by dressing our salads with healthy oil. Vitamins B and C do not need any fat to be absorbed by the body. However, they have to be protected against water.

MINERALS

Salad is bursting with minerals which are indispensible for the synthesis and functioning of the body. Without a sufficient supply of minerals a truly healthy life is impossible. Minerals build our bones and teeth and keep them working efficiently. They keep blood pressure and other fluids in the body in proper balance.

Among many essential functions, they react synergistically with vitamins to aid in our metabolic processes. In the last one hundred years processed food, fast food, genetically engineered food, over consumption of sugar and meat, and the use of harmful chemicals in agriculture make it more difficult to obtain the minerals we need to be healthy.

One of the most common deficiencies in people today is that of iron. This not good news, since iron is the mineral found in largest amounts in the blood and is essential for a number of important functions. Blood analysis shows that most of us are also deficient in calcium, potassium and magnesium. Women are lacking sufficient copper, where men have deficiencies in zinc. Minerals are extremely important for the health of the immune system.
