- 1 cup organic butter (no substitutes) - 1/2 cup fructose
- 1 tsp vanilla extract
- 2 cups organic all purpose flour
- 3/4 cup ground almonds (toasted)
- 1 cup confectioner's sugar
- 1 tblsp ground nutmeg
In a mixing bowl, cream butter, sugar and vanilla. Gradually add flour, mix well. Stir in almonds.
Shape into 1" balls; place 2" apart on ungreased baking sheets.
Bake at 300 deg for 18-20 minutes or until bottoms are lightly browned. Cool on wire racks.
Combine confectioner's surgar and nutmeg.
Gently roll cooled cookies in sugar mixture. Yield: 5 dozen.
