Baked Biscuits with Almond Oil
- 3 Eggs
- 4 T Sucanat (Cane Juice Sugar)
- 4 T almond oil
- 4 T sweet white wine
- 1 C whole wheat flour
- 1 t baking powder
- Pinch of sea salt
- 1 T butter
- Nutmeg, freshly grated
This light sweet-tooth delicacy goes well with an afternoon coffee, or served with vanilla ice cream and fresh strawberries.
Preheat oven to 400 deg.
For biscotti: In a large bowl, beat eggs & sugar using a hand mixer. Stir in oil and wine, then sift in flour, baking powder and salt.
Mix until the dough is smooth. Pour the dough into a butter-greased spring-form pan and bake for 35-40 min.
Cool for 5 minutes then slice. For a real treat, sprinkle lightly with freshly grated nutmeg and serve warm.
For Cookies: follow above directions and spoon cookie balls from dough. Bake 35-40 minutes
