| 2 tsp. Sesame Oil
||1 clove garlic minced
| 1 green onion minced
|| 1/4 cup red pepper diced
| 1 small zucchini diced
|| 1 cup cooked Amaranth
|Tamari to taste
- Heat a skillet over medium heat and add oil. Add garlic, green onion, zucchini and red pepper one at a time and cook until they are sealed and soft.
- Mix cooked amaranth gently into the vegetables. Cook 5 minutes.
- Season to taste with tamari before serviing.
- Serve hot. Amaranth and vegetables make a complete meall accompany with a raw vegetable salad or relish.
